Oreo Cheesecake 

Ingredients

 

13 Oreos

3 Digestive Biscuits

50grms Butter

500ml Cream

180g Cream Cheese

3 dsrt spns Icing Sugar

2 caps Vanilla Essence

Method

 

Base: crush Oreos and digestives in a zipper bag. (You can use a rolling pin or bash them off the counter). Melt the butter in the microwave and pour over the crushed biscuits. Mix, and pour into a 9" cake tin. Flatten, and put in the fridge to set. 

Topping: whip the cream. Mix the cream cheese, vanilla essence and icing sugar, and fold in the cream, and some broken Oreos. Pour on top of the base and put back in the fridge to set for 2 hours. 

To serve: crumble any remaining Oreos over the top. Flake or grated chocolate works too. ENJOY!

Lemon  Cheesecake 

Ingredients

13 Digestive Biscuits

60grms Butter

250ml Cream

200g Cream Cheese

Lemon Jelly

250ml water

Method

 

Base: crush the digestives in a zipper bag and empty into a bowl. (You can use a rolling pin or bash them off the counter). Melt the butter in the microwave and pour over the crushed biscuits. Mix, and pour into a 9" cake tin. Flatten, and put in the fridge to set. 

Topping: Mix the cream cheese and fresh whipped cream well. Melt the jelly in the microwave wih the 250ml of water. Allow to cool. Add the cooled jelly to the cream mixture and mix well. Pour on top of the base and put back in the fridge to set for 2 hours.
